Valicenti Pasta Farm is a small company made up of a small group of people who work diligently to make beautiful fresh pasta, unique ravioli varieties, and small batch sauces.  Our mission is to grow, source, make, and provide good, wholesome, locally made, real food to our neighbors and the surrounding New England communities. GOLDEN LASAGNA W/ ROASTED VEGETABLES: Golden Gravy, spinach fresh pasta layered with roasted delicata squash, cauliflower, grana padano cheese, grape tomatoes, kale, broccoli, onion, garlic, fresh herbs and topped with fresh mozzarella cheese.

QUATTRO FORMAGGI:  A simple but flavorful classic lasagna, Red Gravy & fresh pasta sheets layered with a 4 cheese blend of local ricotta, grana padano, Caciotta & fresh mozzarella. A touch of nutmeg, garlic, sea salt and spices round out the flavor

BROWN BUTTER & SAGE ROASTED SWEET POTATO RAVIOLI: A best seller, our roasted sweet potatoes with velvety brown butter, fried sage, & Grana Padano wrapped in a carrot pasta dough.

TRUFFLED WILD MUSHROOM:  Wild NH mushrooms sautéed in whole butter with shallot, garlic and thyme then deglazed with Marsala wine and simmered in a reduction of cream and mushroom stock. Finally blended with Umbrian black truffle shavings, fresh ricotta & Grana Padano cheeses and wrapped in a porcini pasta dough.

MOROCCAN BRAISED CARROT & CHICKPEA:  Caramelized onions, carrots, garlic and tomato rich and complex with deep roasted flavors, Moroccan spices, French herbs and plenty of extra virgin olive oil in a carrot pasta dough. (Dairy Free)

ROASTED BEET & PECORINO TOSCANO:  A perfect marriage, sweet and earthy ruby beets with Pecorino Toscano wrapped in a beet pasta dough.
